4 cans water-packed, low-sodium tuna (4 1/2 oz. each)2 small onions 16 small pitted black olives 1 tsp. crushed red pepper flakes 4 cups low-sodium canned, crushed tomatoes 2 Tbsp. olive oil Directions:
Chop onion and olives; drain and flake tuna. In a nonstick saucepan, heat oil over medium heat and
sauteed onion until translucent, about 2 to 3 minutes. Add tuna to saucepan; add olives, canned tomatoes with liquid and pepper flakes. Partially cover saucepan, reduce heat to low and simmer for about 10-12 minutes, stirring occasionally, until most of the liquid has evaporated. Add cooked pasta to sauce, if desired (NOTE: Pasta addition will affect nutritional values); heat through, 1 to 2 minutes, and serve.Makes 4 servings. |
