Spinach Chickpea Salad

Dietary Information:
270 calories, 10 grams protein. 27 grams carbohydrates, 15 grams fat (2 grams saturated fat), 50 milligrams sodium, 7 grams fiber, 3 grams sugar and 0 milligrams cholesterol.
Ingredients:
8 cups thresh spinach
I small red onion
1 l/3 cups fresh mushrooms
2 cups low-sodium, canned chickpeas (garbanzo beans), rinsed and drained
4 Tbsp. olive oi1
1/4 cup fresh lemon juice
Directions:
Whisk olive oil and lemon juice for dressing and set aside. Place rinsed and dried spinach in a salad bowl. Chop onions', wipe mushrooms clean with a damp paper towel and slice. Top spinach with mushrooms, chopped red onion and chickpeas. Toss with dressing and serve.

Serves 4.
