Shrimp-Vegetable Kebobs

Ingredients:
1 1b. fresh or frozen medium-sized shrimp
8 slices small onion
2 cups fresh mushrooms
20 cherry tomatoes
1 1/3 cups olive oil
6 Tbsp. fresh Iemon juice
1 tsp. garlic powder
1 tsp. Italian seasoning
Directions:
Preheat broiler or grill. If using fresh shrimp, peel, de-vein, rinse and pat dry. If using frozen, do not defrost. Peel and cut onions into wedges and set aside. Clean mushrooms with a damp paper towel. Combine oil, lemon juice, garlic powder and Italian seasoning in a bowl. Marinate shrimp and vegetables in lemon mixture, refrigerate for at least 30 minutes. Discard marinade and alternately thread shrimp and vegetables onto skewers. Grill or broil on highest oven rack abut 3-4 minutes per side until shrimp turns pink and vegetables are crisp-tender. Remove from skewers and serve.
