Garlic Scallops

Ingredients:
24 oz. scallops
2 2/3 Tbsp. olive oil
2 garlic cloves
2 Tbsp. fresh parsley
Directions:
Rinse and pat dry scallops. Mince garlic. Heat oil in a non-stick skillet to medium high heat and sautee garlic for about 1 minute. Add scallops; cook until lightly golden for 2 to 3 minutes. Be sure not to overcook. Serve sprinkled with fresh parsley.

Makes 4 servings.
